    Parmesan Crusted Baked Fish - Oh So Busy Mum

    I can’t wait for you to try this Parmesan Crusted Baked Fish recipe! It’s easy to make as it’s baked in the oven in under 15 minutes. The fish is full of flavour with a parmesan crunchy topping and a hint of lemon.

    Parmesan Crusted Baked Fish

    Making seafood at home is budget-friendly and actually quite easy, especially when you bake it. This recipe is ready in under 15 minutes, and it’s all cooked in the oven, so there’s no need to flip or fry it. 

    Parmesan Crusted Baked Fish Ingredients

    Ingredients

    • white fish fillets (I use cod or hoki fillets)
    • panko breadcrumbs
    • grated parmesan cheese
    • butter
    • mayonnaise
    • dijon mustard
    • fresh chopped parsley
    • salt and pepper 
    • lemon zest
    • lemon juice

    Instructions

    Parmesan Crusted Baked Fish step 1

    Preheat oven to 200°c and line a baking tray with baking paper. Pat dry each fish fillet and lay on the baking tray.

    Mix panko breadcrumbs, parmesan cheese, melted butter, mayo, dijon mustard, salt & pepper, parsley, lemon zest, and lemon juice in a bowl.

    Spoon the mixture on top of each piece of fish and gently press it down. It’s fine if a little fall off the sides.

    Bake in the oven for 15 minutes or until the fish is cooked and the crumb is browned.

    Remove from oven and allow to sit for 5 minutes before serving.

    Serve with a side salad and hot chips.

    Top Tip

    You can pop the fish under the grill for one minute to get the top nice and crispy!

    What Type Of Fish To Use?

    Any type of white fish, such as cod, hoki, barramundi, flathead, or basa. I tend to buy whatever is on sale for the week or buy frozen fish if it’s cheaper.

    Don’t be scared to use frozen fish. I’ve been buying a lot of frozen fish (NZ Hoki this week) and it’s perfectly fine to use. Just make sure that it’s fully defrosted in the fridge before cooking. I take it out of the freezer the day before and leave it in the fridge until I’m ready to cook with it.
