This Parmesan Panko Crusted Baked Fish recipe is easy to make as it’s baked in the oven in under 15 minutes. The fish is full of flavour with a crunchy parmesan topping and a hint of lemon flavour.

1 kg fish fillets - 4 fillets I use cod or hoki fillets 1 cup panko breadcrumbs ½ cup grated parmesan cheese 5 tablespoons butter melted 4 tablespoons mayonnaise 4 teaspoons dijon mustard 4 tablespoons freshly chopped parsley 1 teaspoon salt and pepper ½ lemon of zest 2 tablespoons lemon juice
Preheat oven to 200°c and line a baking tray with baking paper.
Pat dry each fish fillet and lay on the baking tray.
Mix panko breadcrumbs, parmesan cheese, melted butter, mayo, dijon mustard, salt & pepper, parsley, lemon zest, and lemon juice in a bowl.
Spoon the mixture on top of each piece of fish and gently press it down. It’s fine if a little fall off the sides.
Bake in the oven for 15 minutes or until the fish is cooked and the crumb is browned slightly.
Remove from oven and allow to sit for 5 minutes before serving.
Serve with a side salad and hot chips.
