This one tray sausage bake is by far the easiest dinner you will ever make! It's family friendly, only takes a few minutes to prepare and 30 minutes to bake in the oven. Oh, and did I mention that you don't have to flip or turn a thing? That's my kind of meal!

Another great thing about one tray dinner bakes is that you can use whatever you have in the fridge! It's also a great way to use up any leftover vegetables. I also find this one tray bake budget friendly which is fantastic given the increase in the price of groceries at the moment.

What you need to make this sausage bake
- Sausages - I have used chicken, macadamia and honey flavoured sausages from my local butcher.
- Vegetables - I have used corn, mushrooms, potatoes, onion, carrot and zucchini.
- Olive Oil
- Seasonings - I use tuscan seasoning in a jar from Woolworths but any would work fine.
Tips
- Cut the potatoes small so that they cook around the same time the other vegetables and sausage are ready. If you cut them too big, they won't be cooked in time.
- Season well! You want the roasted vegetables to be full of flavour. I use the tuscan seasoning from Woolworths. It's full of flavour and goes perfectly with sausages.
- Make up a batch of instant gravy to serve with the sausages and vegetables.
- Use up any vegetables you have on hand in your fridge.

Ingredients
- 8 sausages
- 4 potatoes diced small
- 1 red onion
- 2 zucchini
- 1 carrot
- 8 mushrooms
- 4 pieces corn
- 2 tablespoon olive oil
- 2 tablespoon seasoning I use tuscan
Instructions
- Preheat oven to 180°c (fan-forced).
- Using a large flat baking tray, spray it with olive oil to stop the food from sticking.
- Lay out sausages and chopped vegetables on the baking tray.
- Drizzle with olive oil and add seasoning.
- Bake in the oven for 30-35 minutes when all vegetables and sausages have cooked through. I don't flip or turn anything, but feel free to do this halfway if you like.
- Serve with instant gravy on the side.
