    Chicken Satay Sticks with a Peanut Dipping Sauce PINTEREST

    After just returning from Bali where I ate satay sticks daily, the cravings kicked in at home, and I just had to make my own. These Indonesian Style Chicken Satay Sticks with a Peanut Dipping Sauce are kid friendly and not spicy at all.

    The chicken Satay sticks are perfect served with some plain rice or a cucumber salad. They are full of flavour and super easy to make, only taking a few minutes to prep and under 10 minutes to cook.

    Ingredients

    Using just 5 ingredients, you can make these Indonesian style chicken satay sticks that the whole family will love.

    Satay Sticks

    • wooden skewers
    • chicken ( breasts or thigh)
    • sweet soy sauce (ketjap manis)
    • olive oil
    • ground coriander
    • ground cumin
    • salt & pepper to taste

    Peanut Dipping Sauce

    • peanut butter (smooth or crunchy)
    • coconut cream
    • hoi sin sauce
    • lime juice
    • brown sugar
    • crushed peanuts (if using smooth peanut butter)

    How to make the Chicken Satay Sticks

    You will want to soak the wooden skewers for at least 30 minutes prior to using them to stop them from burning when you cook them.

    Mix all of the marinade ingredients together and reserve a few tablespoons so you can brush it on the satay sticks with this when cooking. Dice up your chicken to around 2cm cubes and cover with the marinade, and pop in the fridge for at least 2 hours. If you don't have the time to do this, it can be skipped! If you can marinate them overnight, even better!

    Thread each piece of diced marinated chicken onto the soaked wooden skewer.

    Cook in a frypan or on a BBQ grill for around 4 minutes on each side until cooked through. Brushing frequently with the reserved marinade to give them some extra flavour.

    Once cooked, remove from the grill and serve with a side salad and rice.

    To make peanut sauce, mix all sauce ingredients together and serve on the side or drizzled on top of the satay sticks.

    Ingredients
      

    Satay Sticks

    • 1 kg chicken breast or thigh diced
    • ½ cup sweet soy sauce (ketjap manis)
    • ¼ cup olive oil
    • ½ teaspoon ground coriander
    • ½ teaspoon ground cumin
    • ½ teaspoon salt and pepper to taste

    Peanut Dipping Sauce

    • ¼ cup peanut butter crunchy or smooth
    • ¼ cup coconut cream
    • 2 tablespoons hoi sin sauce
    • 1 tablespoon brown sugar
    • 1 tablespoon lime juice
    • 1 tablespoon crushed peanuts for topping if you use smooth peanut butter.

    Instructions

    Peanut Dipping Sauce

    • Mix all sauce ingredients together to make peanut sauce and serve on the side.

    Notes

    Store the peanut sauce in the fridge for 4 days or you can freeze it for up to 3 months.
