Instructions
Chicken Satay Sticks
Soak the wooden skewers for at least 30 minutes before using them, which will stop them from burning when you cook them.
Mix all of the chicken satay marinade ingredients together and reserve a few tablespoons so you can brush it on the satay sticks with this when cooking.
Dice up your chicken breast to around 2cm cubes and cover with the marinade, and pop in the fridge for at least 2 hours (overnight is best). If you don’t have the time to do this that's ok, just brush extra on when cooking.
Thread each piece of diced marinated chicken breast onto the soaked wooden skewer.
Cook in a frypan or on a BBQ grill for around 4 minutes on each side until cooked through. Brushing frequently with the reserved marinade.
Once cooked, remove from the grill and serve with a side salad, rice and the peanut dipping sauce.
Peanut Dipping Sauce
Mix all sauce ingredients together to make peanut sauce and serve on the side.
Notes
Store the peanut sauce in the fridge for 4 days or you can freeze it for up to 3 months.
