Are you ready for the best melting moments biscuit recipe? They are so good and just melt in your mouth. The best part of my melting moments biscuit recipe is that you only need 4 ingredients and under 20 minutes to make them.
As the name suggests, these biscuits will literally melt in your mouth. They have a delicate, crumbly texture that just melts away when you take a bite. I love that you can add some flavouring to the cream filling to mix it up a little bit. I like to add a dash of lemon juice and some rind or a few tablespoons of passionfruit to make passionfruit melting moments.
Ingredients
Here are the 4 ingredients you need to make these melting moments biscuits.
Biscuits
- plain flour
- custard powder
- butter
- icing sugar
Icing
- icing sugar
- butter
- custard powder
- optional depending on if you want flavoured filling - vanilla essence, passionfruit pulp or lemon juice/rind.

Instructions
Using an electric mixer, cream together butter and the icing sugar until light and pale.
Sift flour and custard powder into the butter mixture and mix with the electric mixer until combined. You might have to add a dough hook for this part, although I don't.
The mix will be a light and easy to handle dough.
Roll the biscuit dough into teaspoon-sized balls and arrange them on the tray, allowing space to spread slightly.
Bake in the oven for 12 minutes.
Allow to cool on a tray while you make the icing.
Using an electric mixer, cream together the icing sugar, butter and custard powder. Add in the desired flavouring like vanilla, passionfruit or lemon.
Add filling to one side of each of the cooled biscuits and sandwich them together.
Icing Flavours
- Passionfruit Melting Moments - Add a few tablespoons of passionfruit pulp to the filling.
- Lemon Melting Moments - Add some lemon rind and a tablespoon of lemon juice to the filling.
- Vanilla melting Moments - Add a teaspoon of vanilla essence to the filling.
Storage
- Store biscuits in an airtight container: This helps to keep moisture out and maintain the crispness of the biscuits for up to 7 days.
- Layer with baking paper: To prevent the biscuits from sticking together or crumbling during storage, you can place a layer of paper between each layer of biscuits.

Filling

- 75 grams butter
- 1 tablespoon custard powder
- 1 teaspoon vanilla essence You can add passionfruit pulp or lemon juice instead

- Preheat oven to 180°c and line a large baking tray with baking paper.
- Using an electric mixer, cream together the butter and the icing sugar until light and creamy.
- Sift flour and custard powder into the butter mixture and mix using the electric mixer.
- Roll into teaspoon-sized balls and arrange on the tray allowing space to spread slightly. Press down on each of the biscuits lightly with a fork.
- Bake for 12 minutes.
- Remove from the oven and allow to cool.
Filling
- Using an electric mixer, cream together the icing sugar, butter and custard powder.
- Add in the desired flavouring like vanilla, passionfruit or lemon.
- Add filling to one side of each of the cooled biscuits and sandwich them together.

Made these with my 3 year old. Super easy and tasted amazing. Will probably make them as minis next time they were normal size you would buy in a store and it was just a bit to big for little ones.
