This Egg Roll in a bowl will take you under 15 minutes to make and you only need a few ingredients from the supermarket which makes it budget friendly. To make this easy meal, you will need mince (chicken, turkey or pork), a bag of coleslaw mix, and sauce. Thats it!
This is my go-to meal when I want something quick and easy to make for dinner. I like to serve this egg roll in a bowl over white rice, but you could also use cauliflower rice or simply eat it on its own if you want to reduce the carbs.

You can add any extras you might have on hand in the fridge or if you want to use up leftover vegetables. That's why I love this meal so much!

- mince of choice
- dry coleslaw mix
- minced garlic
- minced ginger
- soy sauce
- sesame oil
- hoisin sauce
- cooked rice for serving

Instructions
This easy-to-make egg roll in a bowl will take you between 10-15 minutes to make and it can all be cooked in one frypan (my kind of meal).
Brown the mince in a frypan on a medium heat until cooked. Drain if needed. Add garlic and ginger paste, and brown for 1 minute.
Add coleslaw mix and stir through. Cook for 3 minutes.
Add sauce to the frypan and mix.
Serve with rice topped with shallots and sesame seeds.
What type of mince to use?
I like to use chicken or turkey mince, but pork mince also goes well in this recipe. I say buy what is on sale for the week.

- 2 cloves garlic 2 teaspoons minced garlic
- 1 teaspoon ginger paste
Sauce
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 3 teaspoon hoisin sauce
- 2 tablespoons water
