Instructions
If you don't like sundried tomatoes, feel free to swap them out for cherry tomatoes.
Heat oil in a frying pan on a medium heat. You can use olive oil or a little oil from the sundried tomatoes.
Prepare the chicken by butterflying or flattening the chicken breasts to ensure even cooking. Season the chicken with tuscan seasoning, salt, and pepper. Fry the chicken in the pan for approximately 6 minutes on each side or until cooked through. Once cooked, remove the chicken from the pan and set it aside.
In the same pan, add the chopped onion and minced garlic. Sauté them for about 1 minute over medium heat until fragrant and slightly softened. Add the chopped sun-dried tomatoes and simmer for an additional minute.
Pour in the thickened cream and stir until combined. Add the garlic salt and the extra tablespoon of tuscan seasoning. Allow the sauce to simmer for 4 minutes, allowing the sauce to thicken.
Add the baby spinach leaves and grated parmesan cheese to the pan. Let them simmer for 1 minute until the spinach wilts and the cheese melts into the sauce.
Return the cooked chicken back to the pan, coating it with the creamy tuscan sauce. Serve the chicken over cooked pasta, rice, or mashed potatoes, spooning extra sauce over the top.
Hint: If you like a little spice, add some chilli flakes to the recipe at the end.
