This easy to make Creamy Tuscan Chicken has the most amazing creamy garlic sauce with a hint of baby spinach and sundried tomatoes. Not only does it taste amazing, but it's also surprisingly easy to make.

2tablespoonsolive oil (or oil from sun-dried tomatoes)
3tablespoontuscan seasoning2 for the chciken and 1 for the sauce
1brown oniondiced

½cupsundried tomatoeschopped
600mlsthickened cream
1tablespoongarlic powder
1cupbaby spinach leaves
½cupgrated parmesan cheese
Instructions
Prepare the chicken by butterflying or flattening the chicken breasts to ensure even cooking. Season the chicken with 2 tablespoons of tuscan seasoning, salt, and pepper.
Heat oil in a frying pan on a medium heat. You can use olive oil or a little oil from the sundried tomatoes.
Fry the chicken in the pan for approximately 6 minutes on each side or until cooked through. Once cooked, remove the chicken from the pan and set it aside.
In the same pan, add the chopped onion and minced garlic. Sauté them for about 1 minute over medium heat until fragrant and slightly softened. Add the chopped sun-dried tomatoes and simmer for an additional minute.
Pour in the thickened cream and stir until combined. Add the garlic salt and the extra tablespoon of tuscan seasoning. Allow the sauce to simmer for 4 minutes, allowing the sauce to thicken.
Add the baby spinach leaves and grated parmesan cheese to the pan. Let them simmer for 1 minute until the spinach wilts and the cheese melts into the sauce.
Return the cooked chicken back to the pan, coating it with the creamy tuscan sauce. Serve the chicken over cooked pasta, rice, or mashed potatoes, spooning extra sauce over the top.
