    Prawn Pasta with Tomato and Spinach

    This Prawn Pasta with tomato and spinach is light and fresh and will take you under 15 minutes to make. My favourite thing about this recipe is you only need a few ingredients to make it!

    Most pasta recipes usually have a creamy sauce, but I understand that sometimes you may prefer a lighter and fresher pasta. This recipe is perfect for those occasions as it does not contain any cream. It is a popular dish in my family, and those who like a bit of spice add some dried chilli flakes on top.

    Ingredients

    I buy the frozen prawns from the freezer section of the supermarket and defrost them prior to cooking.

    • butter
    • garlic, minced
    • prawns peeled, tails off & thawed
    • grape tomatoes
    • dijon mustard
    • italian seasoning
    • salt & pepper
    • fresh baby spinach
    • spaghetti pasta
    • reserved pasta water
    • grated parmesan cheese
    • optional chilli flakes to serve

    Instructions

    Prawn Pasta with Tomato9 and Spinach

    Cook the pasta as per the directions on the packet.

    In a large frypan on a medium high heat, add the butter and garlic and fry for around 30 seconds. Add the prawns and cook for around 5 minutes, stirring a few times.

    Add the tomatoes, italian seasoning, mustard, salt and pepper, and cook for 4 minutes.

    Reduce the heat to medium and add the baby spinach.

    Retain ½ cup of pasta water and add it to the pan with the cooked drained pasta and toss.

    Top with parmesan cheese and optional chilli flakes. Serve!

    Top tip

    You can use any pasta you like in this recipe, such as spaghetti, fettuccine, and penne pasta.

    • 500 grams prawns peeled, tails off & thawed
    • 200 grams grape tomatoes cut into halves 1 punnet
    • 1 tablespoon dijon mustard
    • 1 teaspoon Italian seasoning
    • ½ teaspoon salt & pepper
    • 2 cups fresh baby spinach
    • 500 grams spaghetti pasta
    • ½ cup reserved pasta water
    • ½ grated parmesan cheese
    • optional chilli flakes to serve
