    Light and fluffy scones (Thermomix recipe included)

    This has to be the BEST scone recipe ever! If you want a light and fluffy scone recipe, this is for you. They are easy to make and the recipe is no-fail every single time. I make them in my Thermomix, but you can make them without the Thermomix and they will still turn out perfect!

    What you will need

    • Self raising flour
    • Butter
    • Sugar (you can leave this one out if you like)
    • Egg
    • Cream
    • Full cream milk

    Now, you can leave out the sugar, and it won’t affect the recipe turning out perfectly! I like a little bit of sweetness in my scones. You can also subsitute the self-rasing flour for gluten free self-raising flour with no other changes to the recipe. A few of my readers have confirmed they still turn out perfectkly with the gluten free flour.

    Light and Fluffy Scones (Thermomix Recipe Included)

    Ingredients
      

    • 2 1/2 cups self raising flour you can use gluten free SR flour
    • 1 1/2 tbsp butter
    • 1 1/2 tbsp caster sugar You can leave the sugar out if you like
    • 1 egg
    • 1/2 cup thickened cream 125 ml
    • 1/2 cup full cream milk 125 ml

    Thermomix

    • 400 grams self raising flour You can use gluten free SR flour
    • 20 grams butter
    • 20 grams caster sugar You can leave the sugar out if you like
    • 1 egg
    • 125 grams thickened cream
    • 125 grams full cream milk

    Instructions
     

    • Preheat fan forced oven to 180°c.
    • In a large bowl, using your fingers, rub together flour and butter until breadcrumb consistency.
    • Make a well in the centre and add the sugar, egg, milk and cream. Mix with a flat butter knife until the mixture forms a soft dough.
    • Knead dough for 30 seconds on a lightly floured surface.
    • Place dough on a well-floured surface and pat dough into 3cm thickness. The dough will be very light and sticky (this is normal).
    • Cut into rounds with a scone cutter or the top of a glass.
    • Place scones together (touching each other) onto an oven tray lined with greaseproof paper.
    • Glaze with a little milk and bake for 15 – 20 minutes (until slightly brown on top).
    • Allow to cool and serve with jam & cream.

    Thermomix Instructions

    • Preheat fan forced oven to 180°c
    • Place flour and butter into TM bowl and mix for 8-10 seconds on speed 9.
    • Place sugar, egg, milk and cream into TM bowl and mix for 10 seconds on speed 4 until mixture is combined.
    • Knead the mixture for 30 seconds on interval dough speed until mixed.
    • Remove dough and place on a well-floured surface and pat dough into 3cm thickness. The dough will be very light and sticky (this is normal).
    • Cut into rounds with a scone cutter or the bottom of the Thermomix measuring cup.
    • Place scones together (touching each other) onto an oven tray lined with greaseproof paper.
    • Glaze with a little milk and bake for 15 – 20 minutes (until slightly brown on top).
    • Allow to cool and serve with jam & cream.
