This has to be the BEST scone recipe ever! If you want a light and fluffy scone recipe, this is for you. They are easy to make and the recipe is no-fail every single time. I make them in my Thermomix, but you can make them without the Thermomix and they will still turn out perfect!
What you will need
- Self raising flour
- Butter
- Sugar (you can leave this one out if you like)
- Egg
- Cream
- Full cream milk
Now, you can leave out the sugar, and it won't affect the recipe turning out perfectly! I like a little bit of sweetness in my scones. You can also subsitute the self-rasing flour for gluten free self-raising flour with no other changes to the recipe. A few of my readers have confirmed they still turn out perfectkly with the gluten free flour.

Light and Fluffy Scones (Thermomix Recipe Included)

Ingredients
- 2 ½ cups self raising flour you can use gluten free SR flour
- 1 ½ tablespoon butter
- 1 ½ tablespoon caster sugar You can leave the sugar out if you like
- 1 egg
- ½ cup thickened cream 125 ml
- ½ cup full cream milk 125 ml
Thermomix
- 400 grams self raising flour You can use gluten free SR flour
- 20 grams butter
- 20 grams caster sugar You can leave the sugar out if you like
- 1 egg
- 125 grams thickened cream
- 125 grams full cream milk
Instructions
- Preheat fan forced oven to 180°c.
- In a large bowl, using your fingers, rub together flour and butter until breadcrumb consistency.
- Make a well in the centre and add the sugar, egg, milk and cream. Mix with a flat butter knife until the mixture forms a soft dough.
- Knead dough for 30 seconds on a lightly floured surface.
- Place dough on a well-floured surface and pat dough into 3cm thickness. The dough will be very light and sticky (this is normal).
- Cut into rounds with a scone cutter or the top of a glass.
- Place scones together (touching each other) onto an oven tray lined with greaseproof paper.
- Glaze with a little milk and bake for 15 - 20 minutes (until slightly brown on top).
- Allow to cool and serve with jam & cream.
Thermomix Instructions
- Preheat fan forced oven to 180°c
- Place flour and butter into TM bowl and mix for 8-10 seconds on speed 9.
- Place sugar, egg, milk and cream into TM bowl and mix for 10 seconds on speed 4 until mixture is combined.
- Knead the mixture for 30 seconds on interval dough speed until mixed.
- Remove dough and place on a well-floured surface and pat dough into 3cm thickness. The dough will be very light and sticky (this is normal).
- Cut into rounds with a scone cutter or the bottom of the Thermomix measuring cup.
- Place scones together (touching each other) onto an oven tray lined with greaseproof paper.
- Glaze with a little milk and bake for 15 - 20 minutes (until slightly brown on top).
- Allow to cool and serve with jam & cream.
