Chicken Cordon Bleu is chicken breast rolled up with ham and cheese baked in the middle. This meal is a hit with my kids and it's easier than you think to make!
This easy to make chicken cordon blue recipe only takes a few minutes to put together, 30 minutes to bake and a few minutes to make the creamy cheese sauce. It would go perfectly with my easy to make 10 minute mac & cheese recipe or these Crispy Air Fryer Potato Skins. I served it with a homemade side salad, Thermomix mashed potato, and a creamy cheesy sauce (recipe below).

Chicken
- Chicken breasts
- Ham
- Swiss cheese
- Eggs
- Panko crumbs
- Plain flour
- Garlic & onion powder
- Salt & pepper
- Tooth picks to hold chicken together
Creamy Sauce (optional)
- Butter
- Plain flour
- Milk
- Dijion mustard
- Parmesan cheese
- Garlic powder
- Salt & pepper
You can use any seasoning you like, so feel free to mix it up if you have other spices or seasonings on hand. It would go nice with a few chilli flakes for a bit of heat!

Ingredients
Chicken
- 3 large chicken breasts
- 12 pieces ham
- 6 pieces swiss cheese
- 4 eggs
- ¼ cup milk
- 2 cups panko crumbs
- 2 cups plain flour
- 1 teaspoon garlic powder
- 1 teaspoon salt & pepper
- toothpicks to hold the chicken together
Creamy Sauce
- 3 tablespoon butter
- 2 tablespoon plain flour
- 2 cups milk
- 1 tablespoon dijon mustard
- ¼ cup parmesan cheese
- 1 teaspoon garlic powder
- salt and pepper
Instructions
Chicken
- Preheat oven to 180°c (fan-forced) and line a baking tray with baking paper.
- Put flour, bread crumbs and egg wash in separate containers. Add eggs, milk, and 1 tablespoon of flour and whisk to create the egg wash. The flour makes the egg wash thicker and helps it stick better.
- Butterfly the chicken breasts. To do this, sit the chicken breast on a cutting board, place your hand on the top of it, and slowly slice it in half, making it a thinner piece of chicken.
- Bang out the chicken using a rolling pin or tenderiser with glad wrap on top to about 1cm thick. Cut the thin chicken breasts in half, making 2 pieces.
- Add a dash of seasoning (garlic, onion powder, salt and pepper) on each piece and top with ham and cheese.
- Carefully roll up each piece.
- Coat in flour, dip in egg wash and then panko bread crumbs. Place on a baking tray and spray with some olive oil.
- You may want to add some toothpicks to hold the shape when baking.
- Place in oven and bake for 30-35 minutes until the chicken has cooked through.
Creamy Sauce
- In a saucepan on a medium heat, melt butter until bubbling and add flour to make a raux.
- Slowly add milk as you are whisking until thick and smooth.
- Allow simmering for 3 minutes while mixing every minute.
- Add mustard, garlic powder, salt and pepper and parmesan cheese.
- Stir until cheese has melted and serve on top of the chicken.
