This has to be my favourite dips! It’s fresh, chunky and goes perfectly with corn chips or as a steak topping. I tend to double the ingredients to make a large serve because I pretty much eat the whole lot by myself.
- 1 Avocado – diced
- 3 Tomatoes – diced
- 1 Red onion – diced and soaked in cold water for 2 minutes to remove the bitter taste.
- 1/2 teaspoon lemon juice
- 1/2 teaspoon lime juice
- Salt & pepper
- Optional – coriander
- Mix all ingredients together and serve with corn chips. It’s best served fresh, but it will last in the fridge for 2 days.
