    The BEST chocolate chip cookie recipe!

    When I tell you this chocolate chip cookie recipe is the best, it really is! They are soft with just the right amount of "chew" and are so easy to make. I'm sure this chocolate chip cookie recipe will be a favourite in your house just like it is in mine. I have to double this recipe when making it because everyone in my house just can't get enough of them and they only last a few hours.

    The BEST chocolate chip cookie recipe!

    Feel free to switch up the recipe and use whatever flavour chocolate chips you like! You could even add some white chocolate chips with macadamia nuts. Oh and if soft cookies aren't for you, just add an extra 3-5 minutes on the baking time and you will have a perfectly cooked crunchy cookie.

    This recipe will make 24 cookies (I double it and make a batch of 48). 

    Ingredients 

    • ½ cup butter (125 grams)
    • ½ cup caster sugar (100 grams) 
    • ½ cup brown sugar (90 grams)
    • ½ teaspoon vanilla essence
    • 1 egg
    • 1 ½ cups of self-raising flour  (250 grams)
    • pinch of salt 
    • 1 packet of chocolate chips (200 grams) 

    Directions 

    1. Preheat the oven to 180 degrees and line a baking sheet with baking paper. 
    2. Using an electric mixer on a medium speed, beat butter sugars and vanilla for 1 minute until pale. 
    3. Add the egg and mix for a further 30 seconds. 
    4. Add flour and salt and mix for 1 minute (you might need to use the dough hooks on your mixer for this step)
    5. Add chocolate chips and mix through with a spoon. 
    6. Roll tablespoon sized balls and place them on a baking tray leaving a gap for them to spread. 
    7. Flatten each ball slightly. 
    8. Bake for 10 - 12 minutes and remove from the oven to cool. 
    9. Enjoy!

      This is sooooo easy. Had the oven on fir cooking a tuna-pasta bake and a cottage pie. While they were cooking, I thought I'd try something quick and easy. Every member of the extended family raved about these. Easy, quick and delicious, though the sugar and butter would be terrible for the waste-line!😋
