I love a good easy to make biscuit recipe and this one ticks all the boxes! In Queensland, we have had a crazy amount of rain the past few days which has meant we have spent a lot of time inside and that's no fun for any parent with kids. This was the perfect activity and recipe for them to stay busy with some baking. They are so easy to make and my girls had no problems making them and a BIG mess in my kitchen.
This recipe will make around 24 biscuits depending on the size you make them.
Ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 125g butter, softened
- ½ cup caster sugar
- ½ teaspoon vanilla extract
- 1 egg
- 2 cups plain flour
- 1 teaspoon baking powder
- 4 tablespoons milk
- Sprinkles to decorate ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions
- Preheat oven to 180°c and line 2 x baking trays with baking paper.
- Beat butter, sugar, and vanilla in a bowl using an electric mixer until light and creamy.
- Add egg and mix until well combined.
- Sift flour and baking powder over butter mixture.
- Add milk and stir until just combined (I used a dough hook on my electric mixer for this part).
- Add 2-3 tablespoons sprinkles to the dough and mix until combined.
- Using 1 heaped tablespoon or an ice cream scoop to roll the mixture into balls. Push down the biscuit dough ball to flatten in a bowl of sprinkles.
- Put the biscuit on a lined baking tray and push down further to flatten the biscuit with a spatula (allow room for spreading).
- Bake for 15 minutes or until they are lightly brown (don’t overcook or they will be dry).
- Transfer biscuits to a wire rack to cool.
- ENJOY!
