This Easy Zucchini Slice is so simple to make and it is one of my favourite healthy recipes! You can have this for dinner with a side or send it to school in the lunch box. Oh, and you don't have to keep it simple - add any flavours, spices or vegetables you like.
Ingredients:
- 6 eggs
- 1 cup self-raising flour
- 1 cup grated cheese
- 1 cup grated zucchini, squeeze out all the water and dry in paper towel
Optional:
If you want to give the slice extra flavour, you can add any of the below extras.
- 1 cup bacon, diced
- 1 onion, diced
- 1 teaspoon minced garlic
- 1 teaspoon paprika
- salt and pepper
Directions:
- Preheat oven to 180°C and line a baking tin with baking paper.
- Whisk eggs together until combined. Add zucchini, cheese, flour and any of the optional flavours and mix well.
- Pour into prepared tin and bake for approx 35 -45 minutes or until the top is firm to touch.
