If you're looking for a moist and tasty banana cake, this recipe is for you! It makes a large batch, so make sure you use a large rectangle baking tray.
INGREDIENTS
- 1 ½ cups mashed banana
- 1 teaspoon lemon juice
- 1 ½ cups buttermilk
- 3 cups plain flour
- ½ teaspoon baking soda
- ⅔ cup butter, softened
- 1 cup caster sugar
- ½ cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla essence
Icing
- 200grams cream cheese
- ⅓ cup butter, softened
- 3 cups icing sugar
- 1 teaspoon lemon juice
- ½ teaspoon vanilla essence
DIRECTIONS
- Preheat oven to 180ºc and line a baking tray (22cm x 30cm) with baking paper.
- Mix mashed banana with the teaspoon of lemon juice and set aside.
- Beat together butter and both sugars until light and fluffy.
- Add eggs one at a time into the butter mix. Mix on high for a few minutes until light and fluffy.
- Combine flour and baking soda in a separate bowl.
- Slowly add milk to batter then add flour (do not overmix).
- Fold in banana with a spatula.
- Bake in the oven for around 60 minutes or until toothpick comes out clean. Time will vary depending on your oven. Don't overbake it!
Icing
- Mix all ingredients together using an electric mixer until thick and creamy.
- Ice cake once cool and store in the fridge for up to 3 days.
