    4 Ingredient Chia Seed Pudding

    These 4 ingredient chia seed puddings are perfect to kickstart the day! I make smaller batches and send them to school for lunches instead of yoghurt and they have been a hit with my kids. If you haven't used chia seeds before, they swell up and go soft with liquid, which thickens the milk to make a pudding-like consistency. You can purchase chia seeds from Woolworths in the health food section. 

    The recipe below will make 1 pudding with a ratio of 2 tablespoons of chia seeds to half a cup of milk, so if you want to make more, you can double or triple the recipe. 

    Ingredients 

    • 2 tablespoons chia seeds
    • ½ cup of coconut milk or regular full cream milk (I prefer to use coconut milk)
    • 1 teaspoon honey to sweeten 
    • Toppings - you can use fruit or nuts. 

    Directions 

    1. Mix chia seeds with the milk and stir through the honey. 
    2. Spoon the mixture into a container or glass jar and allow to set in the fridge for at least 3 hours (overnight is best). 
    3. Top with fruit or nuts prior to serving. 

    The chia seed puddings can be stored in the fridge for 2 - 3 days. The fruit topping is best added fresh prior to serving.
