There's no need to flip these babies! You can bake these pancakes muffins or pikelet muffins (AKA Puffins) just as you would bake cupcakes in the oven. Baking them makes them the perfect shape for the lunchbox or easy breakfast on the go.
I like to bake the baked pancake muffins in these silicone muffin cases from Oh My Lunchbox because they are the perfect size for the lunchbox and are reusable, dishwasher safe and freezer safe. I prefer to use the shaker pancake mix that you can buy from the supermarket and just add water. I follow the directions on the bottle and bake until fluffy to touch.

Now, you can top these baked pancake muffins with just about anything! I added fruit and some sprinkles to these, but you can also use chocolate chips, syrup, or nuts.

How To Make These Baked Pancake Muffins
I use the store-bought shaker pancake mix because you just have to add water, shake and you're done, but if you want a homemade recipe, this fluffy pancake recipe is the best! You can also make them using a homemade batter with the same results.
- Preheat oven to 160°c
- If you're using reusable silicone muffin cases line them out on a flat tray. If you're using paper cases or a cupcake tray, prepare these as you would if you were baking cupcakes (spray oil etc).
- Prepare pancake mix.
- Pour into cases and top with your desired topping.
- Bake in the oven for around 20-25 minutes or until fluffy when touched! Cooking time will change depending on the size of your muffin cases.
