Australia Day is just around the corner and to celebrate, I stacked 2 Aussie favourites together to create this Lamington Pavlova Stack.
INGREDIENTS
Base
- 6 egg whites
- 1 tablespoon cornflour
- 1 teaspoons cream of tartar
- 1 ⅓ caster sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
Topping
- 200ml pure cream
- 1 teaspoon vanilla extract
- ¼ cup icing sugar
- 2 tablespoons strawberry jam
- 3 lamington squares broken into pieces ( I used store-bought lamingtons)
- Chocolate sauce to drizzle (I used ice magic)
DIRECTIONS
- Preheat oven to 180°C and line a large baking tray with non-stick paper. Dust tray lightly with corn flour.
- Using an electric mixer, mix egg whites and cream of tartar on high until soft peaks form.
- Slowly add sugar and corn flour while mixing until thick and glossy.
- Fold through vinegar and vanilla essence.
- Spoon mix onto the tray in two circles, shape with a spatula. I like to draw a circle on the opposite side of the paper for even round bases.
- Bake for around 1 hour or until the base has hardened. Once cooked, open oven door and allow to cool slowly to prevent the base from sinking.
- Using an electric mixer, beat cream, vanilla and icing sugar until thick.
- Once the base is cool, spread cream on the first layer and drizzle jam, chocolate sauce and sprinkle lamington pieces on the top.
- Repeat on the top layer and serve.
