Easy Breakfast Cups

My kids can’t get enough of these breakfast cups! I like to have a stash in the freezer for rushed mornings or when the kids want a hot breakfast. I pop them in the microwave for one minute and they can eat on the go. I keep these really simple by only adding ham and egg, but feel free to add what you like. A few things that cook well in them are cheese, capsicum, onion and shallots.

Yield 12


  • 12 slices of ham 
  • 12 eggs 
  • Spray oil 
  • Salt & pepper


  1. Spray muffin tray with oil and preheat oven to 18o°c. 
  2. Line each muffin tray with ham and crack an egg in each. 
  3. Add salt and pepper and cook for 15 minutes.
