My kids can't get enough of these easy to make breakfast cups! I like to have a stash in the freezer for school mornings or when the kids feel like a hot breakfast. I pop them in the microwave for one minute and they can eat on the go. I keep these really simple by only adding ham and egg, but feel free to add what you like. A few things that cook well in them are cheese, capsicum, onion and shallots.

- 12 slices of ham
- 12 eggs
- Spray oil
- Salt & pepper
Directions
- Spray a muffin tray with oil and preheat the oven to 18o°c.
- Line each muffin tray with ham and crack an egg in each.
- Add salt and pepper and cook for 15 minutes.
