    Crispy Baked Parmesan Chicken

    These Crispy Baked Parmesan Chicken Breasts are juicy on the inside and crispy on the outside! Did I mention they are super easy to make? You only need a few ingredients and they can be cooked in the air fryer or oven.

    What I love about this recipe is that you don't need to worry about making an egg wash or using flour to get the perfect crunch on the outside of these Crispy Baked Parmesan Chicken breasts. The Mayonnaise adds just the right amount of flavour and coats the chicken perfectly to create the outer crunch without the need to deep fry the chicken breasts.

    What you will need to make these Crispy Baked Parmesan Chicken Breasts.

    • chicken breasts
    • mayonnaise
    • panko crumbs
    • parmesan cheese grated (I used shaved and just blitzed in the Thermomix)
    • spices - smoked paprika, garlic powder, onion powder, salt and pepper
    • olive oil spray

    Instructions

    Combine mayonnaise, paprika, garlic powder, onion powder and salt/pepper in a bowl.

    Mix together finely grated parmesan cheese and panko breadcrumbs in a separate shallow dish. Dip the chicken breast in the mayonnaise and then coat in breadcrumbs.

    Spray each breast with cooking oil. Place on the lined baking tray and bake at 200°c for 30 - 35 minutes until the chicken breasts have cooked through.

    Cut a chicken breast in half to ensure it's completely cooked through, and serve.

    Hint: You could cook these chicken breasts in the air fryer too! I would just reduce the cooking time by 10 minutes.

    What sides to serve with the crispy chicken?

    I served the crispy panko crumbed chicken with my 10 minute mac and cheese and a side of greens. It would also go perfectly with mashed potato, fries or with any type of pasta.

    Ingredients
      

    • 4 chicken breasts You can flatten these out slightly with a rolling pin to help with the cooking time.
    • 1 cup mayonnaise
    • 1 teaspoon paprika smoked
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • ½ teaspoon salt and pepper
    • 2 cups panko bread crumbs
    • 1 cup parmesan cheese finely grated
    • 1 tablespoon olive oil spray

    Instructions
     

    • Preheat the oven to 200°c and line a baking tray with baking paper.
    • Combine mayonnaise, paprika, garlic powder, onion powder and salt/pepper in a bowl.
    • Mix together finely grated parmesan cheese and panko breadcrumbs in a separate shallow dish.
    • Dip chicken breast in the mayonnaise and then coat in breadcrumbs. Lay the chicken breast out on the baking tray and spray each chicken breast with the oil. 
    • Place in oven and bake at 200°c for 30 - 35 minutes until the chicken breasts have cooked through. 

    Notes

      Amazing!!!!! Was crumbing chicken tonight for our burgers and this popped up in my feed and was keen to try as I knew I had most of the stock on hand ☺️
      Had to make some minor adjustments:
      1 - used 4x chicken drumstick meat (limited choices at our coles)
      2 - Halved the recipe to compensate for smaller cut of chicken
      3 - didn’t have onion powder, just added little more paprika and garlic powder.
      4 - Kept some of the mayo mixed aside so we could use as a spread and dipping sauce for leftovers
      5 - Parmesan was freshly grated off the block

      Thanks again! Loved it as did my 11yo twins! Will def be making again 🙂
