I can't wait for you to try these mini cottage pies made in taco boat tortillas. They make the perfect outer crust and are very easy to make.

I cheated a little to make them even easier to make and used a packet pie and premade mashed potatoes. You can, of course, make all of them from scratch, but I wanted it to be quick and easy.

Ingredients
- mini taco tortilla boats
- shephards or cottage pie mix
- beef mince
- frozen mixed vegetables
- mashed potatoes
- grated cheese

Instructions
Step 1
Preheat the oven to 180°c. Brown the mince, add the frozen vegetables and cook as per the instructions on the pie mix packet.
Step 2
Heat the taco boats in the microwave for 20 seconds to make them easier to separate. Lay the taco boats out on a lined baking tray.
Step 3
Fill each of the boats to the top with the mince filling.
Step 4
Top each of the taco boats with mashed potatoes.
Step 5
Add some grated cheese.
Step 6
Bake in the oven for 15 minutes until the cheese on top has browned.
Step 7
Remove from the oven and serve warm.

Top Tip
Heat the tortilla taco boats in the microwave to separate them so they don't tear.
Storage
Store in the fridge in an airtight container for 3 days.
You can freeze these for up to 3 months in the freezer.
