Cottage Pies in Taco Tortilla Boats

I can't wait for you to try these mini cottage pies made in taco boat tortillas. They make the perfect outer crust and are very easy to make.

Ingredients
  

  • 12 mini taco tortilla boats
  • 1 Shepherd's or cottage pie mix
  • 500 grams beef mince
  • 2 cups frozen mixed vegetables
  • 500 grams mashed potatoes
  • 1 grated cheese

Instructions
 

  • Preheat the oven to 180°c. Brown the mince, add the frozen vegetables and cook as per the instructions on the pie mix packet.
  • Heat the taco boats in the microwave for 20 seconds to make them easier to separate. Lay the taco boats out on a lined baking tray.
  • Fill each of the boats to the top with the mince filling.
  • Top each of the taco boats with mashed potatoes and grated cheese.
  • Bake in the oven for 15 minutes until the cheese on top has browned.
  • Remove from the oven and serve warm.
