    Cob Loaf Pasta

    Okay friends, hear me out. You know how a cob loaf is the absolute queen of party food? Like, it shows up creamy, cheesy and ready to make everyone at the table happy?

    Well… I’ve taken that delicious cob loaf filling and turned it into a pasta dish. Yep. I did that. And it’s honestly every bit as good as it sounds. Think creamy, cheesy, garlicky goodness all swirled through your fave pasta.

    Cob Loaf Pasta

    This is one of those throw-it-in-the-pan, don’t-overthink-it, midweek comfort meals. It’s family-friendly, super easy and perfect for when you want to eat your feelings in the best way possible. 😂

    Cob Loaf Pasta

    Ingredients

    • Brown onion, diced
    • Minced garlic
    • Diced bacon
    • Frozen spinach
    • Sour cream
    • Cream cheese
    • Grated cheese
    • Pasta
    • Reserved pasta water

    Instructions

    Cob Loaf Pasta

    Step 1
    Cook the pasta as per directions on the packet and reserve ½ cup of pasta water.

    Step 2
    Fry the onion and garlic for 2 minutes and add the bacon. Fry for a few minutes until browned.

    Step 3
    Add the frozen spinach and cook for a further 3 minutes.

    Step 4
    Add sour cream, cream cheese, grated cheese and water. Stir through until mixed.

    Add the pasta and stir through.

    Step 6
    Serve!

    And just like that, dinner’s done. Serve it straight into bowls, top with a little extra cheese if you’re feeling extra (always), and enjoy your new favourite comfort food..

    Top Tip

    You can totally make this ahead and reheat for lunch the next day. It might even taste better the next day. Yes, I said it.

    Storage

    Fridge:
    Pop any leftovers into an airtight container and store in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with a splash of milk or water to bring back the creaminess.

    Freezer:
    Yes, you can freeze it! Let the pasta cool completely, then portion it into freezer-safe containers. It’ll keep well for up to 2 months. Defrost in the fridge overnight before reheating. Again, add a little milk or water when reheating to loosen it up.

    💡 Hot tip: If you’re making it ahead for busy nights, freeze it in individual portions for easy grab-and-go meals. Perfect for lunchboxes too (if your kids are into cheesy, garlicky goodness – mine are!).

    Ingredients
      

    • 1 brown onion diced
    • 2 tablespoons minced garlic
    • 500 grams diced bacon
    • 250 grams frozen spinach
    • 300 ml sour cream
    • 250 grams cream cheese
    • 1 cup grated cheese
    • 1 packet of pasta
    • ½ cup reserved pasta water
