I’ve taken that delicious cob loaf filling and turned it into a pasta dish. Yep. I did that. And it’s honestly every bit as good as it sounds. Think creamy, cheesy, garlicky goodness all swirled through your fave pasta.
Cook the pasta as per directions on the packet and reserve ½ cup of pasta water.
Fry the onion and garlic for 2 minutes and add the bacon. Fry for a few minutes until browned. Add the frozen spinach and cook for a further 3 minutes.
Add sour cream, cream cheese, grated cheese and water. Stir through until mixed.
