Cob Loaf Pasta

Oh So Busy Mum
I’ve taken that delicious cob loaf filling and turned it into a pasta dish. Yep. I did that. And it’s honestly every bit as good as it sounds. Think creamy, cheesy, garlicky goodness all swirled through your fave pasta.

Ingredients
  

  • 1 brown onion diced
  • 2 tablespoons minced garlic
  • 500 grams diced bacon
  • 250 grams frozen spinach
  • 300 ml sour cream
  • 250 grams cream cheese
  • 1 cup grated cheese
  • 1 packet of pasta
  • ½ cup reserved pasta water

Instructions
 

  • Cook the pasta as per directions on the packet and reserve ½ cup of pasta water.
  • Fry the onion and garlic for 2 minutes and add the bacon. Fry for a few minutes until browned. Add the frozen spinach and cook for a further 3 minutes.
  • Add sour cream, cream cheese, grated cheese and water. Stir through until mixed.
  • Add the pasta and stir through.
  • Serve!
