Okay, I'll admit it… I cheated a little to make these even easier. I used a packet pie filling and pre-made mashed potatoes to save time, and honestly, they still turned out so good!
Of course, you can totally make everything from scratch if you're feeling fancy, but I wanted a quick and no-fuss version. These are all about keeping it simple without skimping on the comfort food vibes.
Ingredients

- shephards or cottage pie mix
- beef mince
- frozen mixed vegetables
- mashed potatoes
- grated cheese

Instructions
Step 1
Preheat the oven to 180°C (fan-forced). While that's heating up, brown the mince in a pan over medium heat. Once it's cooked through, add the frozen veggies and stir through the packet pie mix. Cook everything together according to the instructions on the packet - easy!
Step 2
Next, take the bake-at-home bread rolls and carefully slice the tops off. Scoop out a little of the soft bread inside to make room for the filling, just enough to create a little hollow without going all the way through.
Step 3
Now it's time to fill them up! Spoon the warm mince mixture into each hollowed-out roll, filling right to the top so they're packed with all that savoury goodness.
Step 4
Once the rolls are filled with the mince, spoon a generous dollop of mashed potato on top of each one. You can smooth it out or give it a little swirl for that classic cottage pie look - totally up to you!
Step 5
Sprinkle a little grated cheese over the top of the mashed potato

Bake in the oven for 10 minutes until the cheese on top has browned.
Top Tip
Don't toss the soft bread you scoop out from the rolls! Pop the little bread pieces on the baking tray alongside your cottage pie rolls and bake them too. They crisp up beautifully and make the perfect crunchy dippers for scooping up any extra filling on the plate. Zero waste and so yum!
Storage
Fridge:
Once cooled, store any leftover cottage pie rolls in an airtight container in the fridge. They'll stay fresh for up to 3 days. To reheat, just pop them in the oven or air fryer for 5-10 minutes to crisp them back up.
Freezer:
Yes, you can freeze them! Wrap each roll individually in foil or baking paper and place in a freezer-safe container or ziplock bag. Freeze for up to 2 months.
To reheat, thaw in the fridge overnight and bake in the oven until heated through and golden on top.
Perfect for meal prepping, lunchboxes or those nights when you just can't be bothered cooking from scratch!

- 500 grams beef mince
- 2 cups frozen mixed vegetables
- 500 grams mashed potatoes
- 1 grated cheese
Instructions

- Cut the top off each of the bread rolls remove a little of the filling.
- Fill each of the bread rolls to the top with the mince filling.
- Top each of the bread rolls with mashed potatoes.
- Add some grated cheese to the top.
- Bake in the oven for 10 minutes until the cheese on top has browned.
