    One Pan Cheesy Savoury Rice

    This cheesy, savoury rice is super easy to make using just one pan and is ready in around 25 minutes. My kids love it and always come back for seconds, even if some pick out all the vegetables.

    I love this one pan rice and mince recipe because you can use whatever you like. You can use rice or pasta, chicken or beef and add any type of vegetables. I like to use the larger frozen vegetables so my kids can pick them out if they want to, but any frozen or fresh vegetables would be fine.

    What ingredients you need

    • Beef mince (I prefer the lean one)
    • 2 cups beef stock
    • 1 cup rice (I used jasmine rice)
    • 1 tin diced or crushed tomatoes
    • 1 brown onion
    • 1 - 2 cups frozen vegetables
    • 2 cloves crushed garlic
    • 1 cup grated cheese
    • Salt, pepper, italian herbs, onion powder and garlic powder

    Tip - Brown the mince for extra flavour and season to taste.

    Ingredients
      

    • 500 grams beef mince
    • 1 brown onion
    • 2 cloves crushed garlic
    • ½ teaspoon salt & pepper
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • 1 teaspoon italian seasoning
    • 1 tin diced tomatoes
    • 1 cup rice I used jasmine rice
    • 2 cups liquid beef stock
    • 1-2 cups frozen vegetables add as many as you like
    • 1 cup grated cheese

    Instructions
     

    • Use a large frypan on a medium heat, and add a tablespoon of olive oil.
    • Add mince, garlic and onion, and fry off until mince has cooked through (this should take around 6-8 minutes)
    • Add tomatoes, and seasonings. Stir through for 1 minute.
    • Add rice, liquid stock and frozen vegetables. Stir through and put the lid on the frypan.
    • Cook with the lid on for around 15 -20 minutes, stirring every 5 minutes. If it starts to look dry, add a little bit of stock.
    • Check that the rice is cooked through and top with grated cheese. Allow cheese to melt with frypan lid on for around 2 minutes.
    • Serve with some fresh parsley.
    • Enjoy!

      I absolutely loved how easy this recipe is. And it's all in one pan. It's so easy and simple to cook especially when you're busy. It's super delicious. I add chilli flakes as well just to add some heat to it and it's yummo.

      This was delicious and an instant favourite it my house. An easy one pot dish with lots of flavour and easy to adapt - just pop in whatever veg you’ve got in the fridge or freezer.

      I absolutely love how easy and tasty this recipe was to make! It's fantastic because you can add extra ingredients and it's great on the dishes, too, which is one thing I ensure gets done before I sit down to eat.
