It’s creamy and it’s packed with flavour. Oh, and it’s got veggies, so you can say it’s healthy. 😅 You can make it ahead, eat it straight out of the pan, or serve it up with a side salad and either way, it’s delicious.

I’ve been playing around with the humble little French onion soup mix lately — you know the one, the good ol’ Woolies packet that’s been hanging out in pantries for decades, and this pasta was my first experiment and it’s a straight-up winner. 👏🏻

Ingredients
- pasta
- shredded chicken (I just grab a Woolies roast chook and pull it apart)
- full cream milk
- thickened cream
- broccoli
- french onion soup mix
- grated cheese
Step 1
Preheat the oven to 180°C (fan forced). Cook your pasta (don’t forget to keep 1 cup of the pasta water – it’s important, promise!).
Step 2
In a frypan, heat a little olive oil and fry up the broccoli and chicken for about 3 minutes.
Step 3
Add in the cream, milk, and French onion soup mix. Let it simmer for 5 minutes.
Step 4
Add the reserved pasta water and your cooked pasta to the pan. Mix it all together.
Step 5
Pour everything into a baking dish, top with cheese, and pop it in the oven for about 10 minutes, or until the cheese is all melted.
Step 6
Serve!
Top Tip
Add some more vegetables for extra flavour.
Storage
Store in the fridge in an airtight container for 3 days.
You can freeze these for up to 3 months in the freezer.
