    Pistachio Mini Pavlova Nests

    The best part? There's no stress. You can whip the cream ahead of time, then just assemble before serving. It's the kind of recipe that lets you spend less time in the kitchen and more time enjoying eating them.

    Ingredients

    • Mini pavlovas or meringue nests
    • Thickened cream
    • Icing sugar
    • Pistachio spread
    • Strawberries
    • Chocolate pieces
    • Crushed pistachios

    Instructions

    Step 1
    Whip the cream with icing sugar until thick.

    Fold through the pistachio spread until combined.

    Don't overmix.

    Fill the pavlova nests with the pistachio cream.

    Top with strawberries, chocolate, and crushed pistachios.

    Top Tip

    You can prep all the components in advance! Whip the cream, chop the strawberries, crush the pistachios and then quickly put everything together right before bringing them to the table.

    Pistachio spread is everywhere right now, and for good reason, it's creamy, nutty, and totally addictive.

    Storage

    Unfilled pavlova nests: Keep them in an airtight container at room temperature for up to 2 weeks. Make sure they stay dry (humidity is their enemy!).

    Pistachio cream filling: Store in the fridge in a covered bowl for up to 2 days. Give it a quick whisk before using if it softens.

    Assembled pavlovas: Best eaten fresh! Once the nests are filled, they'll start to soften after a few hours. For the best crunch, assemble them just before serving.

    • Mini pavlovas or meringue nests
    • 600 ml thickened cream
    • ⅓ cup icing sugar
    • 4 tablespoons pistachio spread
    • 8 strawberries
    • 8 chocolate pieces
    • Crushed pistachios

    Instructions
     

    • Whip the cream with icing sugar until thick.
    • Fold through the pistachio spread until combined (Don't overmix).
    • Fill the pavlova nests with the pistachio cream.
    • Top with strawberries, chocolate, and pistachios.
    • Drizzle over a little extra pistachio spread.
