Okay, so you know the viral Woolworths cake mix biscuits hack using just 3 ingredients? Meet my neapolitan version! They're like the ice cream, but in biscuit form.

They are basically ice cream in cookie form. Think soft, chewy, chocolatey, vanilla-y, and a hint of strawberry and all smooshed into one perfect little biscuit.
Ingredients
- Cake mixes (2 vanilla + 1 chocolate)
- Eggs (1 per packet)
- Melted butter (100g per packet)
- Nesquik Strawberry (optional)
- A few drops of pink food dye

Instructions
Step 1
In 3 separate bowls, mix together one cake mix, one egg, and 100g melted butter.
Step 2
Add a couple of drops of pink food dye to one of the vanilla bowls and Strawberry Nesquik (for the strawberry vibe).
Step 3
Roll little balls from each flavour (see photos) and squish them together into one big ball.
Step 4
Pop them on a tray, press down slightly, and bake at 160°C for 12 minutes.
These biscuits are soft in the middle, lightly golden at the edges, and pastel-hued perfection. They're sweet but not overly so, and they smell like a bakery in your own kitchen. Honestly, they're the kind of treat that you know you wont be able to stop at just one.
Top Tip
Want a little extra wow factor? Add some ice cream between 2 biscuits and make ice cream sandwiches.
Storage
Keep them in an airtight container at room temperature for up to 4 days. You can also freeze them for up to a month - just let them cool completely first and layer them with baking paper.
