    Easy Banana Cake

    If you're looking for a moist and tasty banana cake, this recipe is for you! It makes a large batch, so make sure you use a large rectangle baking tray.

    INGREDIENTS

    • 1 ½ cups mashed banana
    • 1 teaspoon lemon juice
    • 1 ½ cups buttermilk
    • 3 cups plain flour
    • ½ teaspoon baking soda
    • ⅔ cup butter, softened
    • 1 cup caster sugar
    • ½ cup brown sugar
    • 3 large eggs
    • 1 teaspoon vanilla essence

    Icing

    • 200grams cream cheese
    • ⅓ cup butter, softened
    • 3 cups icing sugar
    • 1 teaspoon lemon juice
    • ½ teaspoon vanilla essence

    DIRECTIONS

    1. Preheat oven to 180ºc and line a baking tray (22cm x 30cm) with baking paper.
    2. Mix mashed banana with the teaspoon of lemon juice and set aside.
    3. Beat together butter and both sugars until light and fluffy.
    4. Add eggs one at a time into the butter mix. Mix on high for a few minutes until light and fluffy.
    5. Combine flour and baking soda in a separate bowl.
    6. Slowly add milk to batter then add flour (do not overmix).
    7. Fold in banana with a spatula.
    8. Bake in the oven for around 60 minutes or until toothpick comes out clean. Time will vary depending on your oven. Don't overbake it!

    Icing

    1. Mix all ingredients together using an electric mixer until thick and creamy.
    2. Ice cake once cool and store in the fridge for up to 3 days.
