    Berry Oat Slice

    This Berry Oat Slice is easy to make and makes the perfect snack for the lunchbox. The slice has a crumbly oat biscuit base filled with berries and a crunchy top.

    This berry oat slice is delicious and a popular snack in my girl's lunchbox. This recipe will make enough pieces that you could freeze half of it and pop the rest in the fridge for lunches or an afternoon snack.

    Another way to serve this oat slice is to warm it up slightly in the microwave and top it with some custard or vanilla ice cream.

    Berry Oat Slice ingredients

    Ingredients

    • plain flour
    • self-raising flour
    • brown sugar
    • caster sugar
    • ground cinnamon
    • butter
    • rolled oats
    • egg
    • frozen mixed berries
    • caster sugar
    • cornflour

    Instructions

    Berry Oat Slice step 1

    Preheat oven to 180°c and line a 20 cm x 30cm baking tray with baking paper. Using a food processor or electric mixer on low speed, combine flour, sugar, cinnamon, and butter until the mixture is crumbly.

    Add the oats and egg, and mix until the mixture is just combined.

    Spoon two-thirds of the mixture into the tray.

    Use the back of a spoon to press down evenly.

    Bake for 15 minutes, or until the top is golden.

    Place the berries, sugar, and cornflour in a bowl and mash with a fork or masher. There can still be lumps in the berries, but it helps it spread out if it’s mashed.

    Spread the berry filling evenly over the biscuit base, and sprinkle the remaining oat mixture over the berries.

    Bake for 25–30 minutes, or until the top is golden.

    Set aside in the tray to cool completely.

    Cut into pieces to serve.

    Hint: You can use fresh berries for this recipe too. Just make sure you mash them well. To store this slice, place it in an airtight container for 3 days in the fridge with a piece of paper towel to soak up any moisture. This slice can be frozen for up to 3 months.

    • 1½ cups plain flour
