Caramel & Apple Hot Cross Bun Pudding

This post is a collaboration with Woolworths

If you like caramel and apple (think apple pie), this caramel & apple hot cross bun pudding is for you! It is incredibly easy to make using only a few ingredients from Woolworths, and it's a great recipe to use up any leftover hot cross buns you might have.

I used the Apple & Cinnamon Hot Cross Buns from Woolworths which includes Pink Lady Apples! It's perfect served warm with vanilla ice cream or custard on the side. Insert drooling sounds!

    What you'll need

    • Woolworths apple & cinnamon hot cross buns x 8 (2 packets)
    • 600mls thickened cream
    • 4 eggs
    • 1 teaspoon vanilla essence
    • ½ cup caster sugar
    • Woolworths apple slices (pie fruit)
    • Caramel topping
    • Icing sugar to dust

    Directions

    1. Preheat oven to 180 degrees.
    2. Mix cream, caster sugar, eggs, vanilla together in a bowl.
    3. Open hot cross buns and slice them vertically.
    4. Lay out the first layer of hot cross buns in a baking dish and add the apple slices between each layer. Continue until you have filled the whole dish.
    5. Pour over cream mixture and allow to soak in for 10 minutes.
    6. Bake in the oven for 30-40 minutes.
    7. Top with caramel and icing sugar.
    8. Serve warm with vanilla ice cream or custard.

This caramel & apple hot cross bun pudding is best served warm, but can be stored in the fridge for 2-3 days and heated prior to serving.
