Preheat the oven to 200°c and line a tray with baking paper. Steam the potatoes in the microwave for 7 minutes.
Top with diced bacon (you don't have to cook this first).
Remove the potatoes from the bag and lay them out on the lined tray. Spray each of the tops of potatoes with olive oil.
Squish down each of the potatoes using the bottom of a glass.
Top with grated cheese and place in the oven for 20-25 minutes or until crispy.
Remove from the oven and top with a dollop of sour cream and chopped chives.
Serve!
