Crispy Bacon and Cheese Potatoes

Ingredients
  

  • 1 bag steam potatoes
  • 1 tablespoon olive oil
  • 250 grams diced bacon
  • 1 cup grated cheese
  • ½ cup sour cream
  • 1 tablespoon chives

Instructions
 

  • Preheat the oven to 200°c and line a tray with baking paper. Steam the potatoes in the microwave for 7 minutes.
  • Top with diced bacon (you don't have to cook this first).
  • Remove the potatoes from the bag and lay them out on the lined tray. Spray each of the tops of potatoes with olive oil.
  • Squish down each of the potatoes using the bottom of a glass.
  • Top with grated cheese and place in the oven for 20-25 minutes or until crispy.
  • Remove from the oven and top with a dollop of sour cream and chopped chives.
  • Serve!
