Instructions
Preheat fan forced oven to 180°c and line a baking tray with baking paper.
Using a large bowl and electric mixer, beat together butter and sugar until combined.
Add the vanilla and egg. Beat until just combined.
Add plain flour, cornflour, and baking soda and mix on low speed until cookie dough forms.
Add the chocolate and mix for 20 seconds or until combined.
Using a tablespoon, scoop out the cookie dough (around 3 tablespoons or 70 grams per cookie), roughly roll with hands and place on the tray, leaving room for the cookies to spread.
Bake cookies for 14 minutes or until golden brown.
