Mix all of the big mac style sauce ingredients together and set aside.
Spread out a thin layer of mince to cover the entire soft taco. Add salt and pepper to each one.
Using a frypan on a medium high heat, fry the taco meat side down. Cook for around 4-5 minutes until the meat has browned and is cooked through.
Flip the taco and add a slice of cheese. Cook for 3 minutes until the taco is browned, and the cheese has melted. You can use a fry pan lid to make this process a little quicker.
Remove from the frypan and add the desired toppings. Top with the homemade big mac sauce.
