Preheat fan forced oven to 180°c.
In a large bowl, using your fingers, rub together flour and butter until breadcrumb consistency.
Make a well in the centre and add the sugar, egg, milk and cream. Mix with a flat butter knife until the mixture forms a soft dough.
Knead dough for 30 seconds on a lightly floured surface.
Place dough on a well-floured surface and pat dough into 3cm thickness. The dough will be very light and sticky (this is normal).
Cut into rounds with a scone cutter or the top of a glass.
Place scones together (touching each other) onto an oven tray lined with greaseproof paper.
Glaze with a little milk and bake for 15 - 20 minutes (until slightly brown on top).
Allow to cool and serve with jam & cream.
