Creamy Bacon and Zucchini Pasta

Ingredients
  

  • 500 grams penne pasta
  • 500 grams middle bacon - diced
  • 2 zucchini  - sliced in half moon shape
  • 600 mls thickened cream
  • 60 grams baby spinach
  • 1 vegetable stock cube
  • 1 tablespoon minced garlic

Instructions
 

  • Boil pasta as per instructions on the packet.
  • Add a dash of olive oil to a pan on a medium heat and fry off bacon until browned.
  • Add zucchini, garlic and stock cubes, and cook for 3 minutes.
  • Add cream and simmer until thickened (around 5 minutes)
  • Add creamy sauce to the drained cooked pasta and stir through baby spinach leaves.
  • Serve! You can top it with cheese for some extra flavour.
