Use a large frypan on a medium heat, and add a tablespoon of olive oil.
Add mince, garlic and onion, and fry off until mince has cooked through (this should take around 6-8 minutes)
Add tomatoes, and seasonings. Stir through for 1 minute.
Add rice, liquid stock and frozen vegetables. Stir through and put the lid on the frypan.
Cook with the lid on for around 15 -20 minutes, stirring every 5 minutes. If it starts to look dry, add a little bit of stock.
Check that the rice is cooked through and top with grated cheese. Allow cheese to melt with frypan lid on for around 2 minutes.
Serve with some fresh parsley.
