These Sticky BBQ Chicken Meatballs are so easy to make, which makes them perfect for a weeknight meal. They are made with chicken mince covered in a sweet sticky BBQ sauce.
Preheat fan forced oven to 180°c and line a large baking tray with baking paper.
In a medium bowl, add the chicken mince, egg, bread crumbs, garlic powder, onion powder and salt, pepper. Mix all the meatball ingredients together well.
Roll the mixture into tablespoon sized meatballs and place them on the baking tray. Place the meatballs in the oven for 25 minutes (turning half way).
Using a large fry pan or pot on a medium heat, add the BBQ sauce, honey, water and worcestershire sauce. Bring to a simmer and lower the heat for 8–10 minutes while stirring with a whisk occasionally (you may have to reduce the heat to low so it doesn't burn). The sauce will thicken.
Once the meatballs have cooked through, remove them from the heat and add them to the sauce. Stir the meat balls through the sauce and remove from the heat.
Serve with steamed greens and rice.
Notes
Storage - Store meatballs in the fridge for up to 3 days. If freezing, freeze the meatballs and sauce separately to make it easier to defrost.
