Ingredients

  • cups plain flour
  • ¾ cup self raising flour
  • ½ cup brown sugar
  • ¼ cup caster sugar
  • 1 teaspoon ground cinnamon
  • 185 g butter softened and cut into 1 cm pieces
  • 1 cup rolled oats
  • 1 large egg
  • 2 cups frozen mixed berries 300 grams
  • ¼ cup caster sugar
  • tablespoons cornflour

Instructions

  • Preheat oven to 180°c and line a 20cm x 30cm baking tray with baking paper.
  • Using a food processor or electric mixer on low speed, combine flour, sugar, cinnamon, and butter until the mixture is crumbly.
  • Add the oats and egg, and mix until the mixture is just combined. Spoon two-thirds of the mixture into the tray and use the back of a spoon to press down evenly.
  • Bake for 15 minutes or until the top is golden.
  • Place the berries, sugar and cornflour in a bowl and mash with a fork or masher. There can still be lumps in the berries, but it helps it spread out if it’s mashed.
  • Spread the berry filling evenly over the biscuit base and sprinkle the remaining oat mixture over the berries.
  • Bake for 25-30 minutes or until the top is golden.
  • Set aside in the tray to cool completely.
  • Cut into pieces to serve.
