This Berry Oat Slice is easy to make and makes the perfect snack for the lunchbox. The slice has a crumbly oat biscuit base filled with berries and a crunchy top.
Preheat oven to 180°c and line a 20cm x 30cm baking tray with baking paper.
Using a food processor or electric mixer on low speed, combine flour, sugar, cinnamon, and butter until the mixture is crumbly.
Add the oats and egg, and mix until the mixture is just combined. Spoon two-thirds of the mixture into the tray and use the back of a spoon to press down evenly.
Bake for 15 minutes or until the top is golden.
Place the berries, sugar and cornflour in a bowl and mash with a fork or masher. There can still be lumps in the berries, but it helps it spread out if it’s mashed.
Spread the berry filling evenly over the biscuit base and sprinkle the remaining oat mixture over the berries.
Bake for 25-30 minutes or until the top is golden.
Set aside in the tray to cool completely.
Cut into pieces to serve.
Notes
You can use fresh berries for this recipe too. To store this slice, place it in an airtight container for 3 days in the fridge with a piece of paper towel to soak up any moisture. This slice can be frozen for up to 3 months.
