Prawn pasta with Tomato and Spinach

This Prawn Pasta with Tomato and Spinach is light and fresh and will only take you around 15 minutes to make.

Ingredients
  

  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 500 grams prawns peeled, tails off & thawed
  • 200 grams grape tomatoes cut into halves 1 punnet
  • 1 tablespoon dijon mustard
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt & pepper
  • 2 cups fresh baby spinach
  • 500 grams spaghetti pasta
  • ½ cup reserved pasta water
  • ½ grated parmesan cheese
  • optional chilli flakes to serve

Instructions
 

  • Cook the pasta as per the directions on the packet.
  • In a large frypan on a medium high heat, add the butter and garlic and fry for around 30 seconds.
  • Add the prawns and cook for around 5 minutes, stirring a few times.
  • Add the tomatoes, italian seasoning, mustard and salt and pepper, and cook for 4 minutes.
  • Reduce the heat to medium and add the baby spinach.
  • Retain ½ cup of pasta water and add it to the pan with the cooked drained pasta and toss for 1 minute.
  • Remove from the heat. Top with parmesan cheese and optional chilli flakes.
  • Serve
