4 ways to turn 2 minute noodles into tasty family meals

To my fellow “quick dinner mums”, these recipes using MAGGI 2-Minute Noodles are for you! They are the perfect meals to make on those busy nights when you’re running around with after-school activities. There is very little prep involved, and there are only a few ingredients needed in each recipe. If you’re anything like me, you’ll have a stash of MAGGI noodles ready to go in the pantry.

The recipes I have shared below are staples in my house and will no doubt become staples in yours too! They reheat perfectly, which is a bonus because my children regularly take the leftovers for school lunches. I haven’t tried to freeze any of the recipes, mainly because they are so easy to make that there is no need to freeze them!

Now for the recipes – Each recipe will feed a family of 5.

Quick & Easy Beef Noodle Stir Fry 

  • 4 packets MAGGI beef noodles
  • 500 grams beef strips
  • Stir-fry vegetables (I use the pre-chopped packet from Woolworths)
  • 2 tablespoons honey soy sauce
  1. Cook noodles as per the directions on packet and drain.
  2. On medium heat, fry beef strips until cooked.
  3. Add stir-fry vegetables and sauce.
  4. Cook for a further 5 minutes.
  5. Add the noodles to the stir-fry mix and serve.

Fried Noodles

  • 4 packets MAGGI beef noodles
  • 300 grams diced bacon
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn kernels
  • 1/2 onion
  • 2 eggs
  1. Cook noodles as per the directions on packet and drain (keep flavouring packet to add to bacon).
  2. Fry diced bacon with onion in a frypan until browned and sprinkle with flavouring packet.
  3. Add egg and move around in frypan with a spatula until cooked.
  4. Add frozen corn and peas to bacon and cook for an additional 5 minutes.
  5. Add noodles to bacon.
  6. Mix and serve.

Noodle Bake

  • 3 packets MAGGI chicken noodles (reserve seasoning for egg mix)
  • 6 eggs
  • 1/2 cup cream
  • 1/2  red capsicum – diced
  • 1 zucchini – grated
  1. Cook noodles as per the directions on packet and drain.
  2. Whisk eggs, seasoning and cream together.
  3. Add cooked noodles and vegetables to the egg mix.
  4. Pour into baking dish and bake on 180ºc for 20-25 minutes or until cooked.

Lettuce Cups

  • 4 packets MAGGI beef noodles (save flavouring for the mince)
  • 500 grams chicken mince
  • Carrott
  • 1/2 cup purple cabbage
  • 2 tablespoons soy sauce
  • lettuce to serve
  1. Cook noodles as per the directions on packet and drain.
  2. Fry chicken mince until browned.
  3. Add vegetables, seasoning and soy sauce to mince and cook for a further 5 minutes.
  4. Add noodles and mix.
  5. Serve in lettuce cups.
